Fall is officially here and the first thing that comes to mind is pumpkin spice everything! Am I not right!? I personally love

pumpkin spice coffee in the morning and sometimes even in the afternoon alongside a sweet treat, in the flavor of pumpkin spice as well.

As many of you know, my love for baking runs deep so you will find me in the kitchen whipping up new recipes for this lovely fall season. But something I don’t often share is the amount of mess I make when baking and what my cleanup process looks like.

Thankfully, I have found these cleaning products, Weiman Disinfectant Granite & Stone Wipes and the Weiman Disinfectant Granite & Stone Daily Clean Shine Spray that has worked great and has also made my life easier for all those messes I create in the kitchen! The wipes are always my go-to because of the convenience of them, so you will always find these in our house.The one thing I have learned from baking during these past few years is not to be afraid to try new things. Even when it doesn’t sound as appetizing at first, you just don’t know how great a recipe will turn out to be if you don’t try it first. One of my many specialties and my husband’s absolute favorite cookie that I have made are my famous Pumpkin Spice Sugar Cookies.

There is just something special about the flavors of pumpkin and the blended spices that make the ideal fall blend. These cookies have the absolute best taste of fall that we all crave. These cookies also make the complete treat for your little ones! My girls love them just as much as we do. I personally like to enjoy them in the morning with a nice cup of warm coffee; as for everyone else at home, they just love them at any time of the day. I love easy cookie recipes, especially when I know I have all the ingredients at home ready to bake away. 

My Pumpkin Spice Sugar Cookies are so easy to make and they don’t have to be decorated with royal icing to enjoy. That is just another reason why I love this delicious recipe so much. But if you are like me and like the pretty fancy things in life, more than likely you will be flooding your yummy cookies with royal icing.

Another thing that I enjoy doing is gifting these cookies to our family and friends. They are the perfect personable sweet treat during the holidays. They also make the best little treat to give out to anyone you come in contact with and just want to show them a kind gesture as well. I mean who doesn’t love getting pretty decorated and delicious cookies!? I know I do! Just make sure to bag them in a resealable cello bag and pack them in your choice of packaging.

So, let’s get baking with my personal delicious Pumpkin Spice Sugar Cookie recipe. Feel free to reach out and let me know what you guys think! Enjoy!

Pumpkins Spice Sugar Cookies

(Makes about 12 cookies)

Things you will need:

1 cup of sugar
¼ cup of brown sugar
2 sticks of unsalted butter
1 egg
1 tablespoon of vanilla extract
3 cups of flour
1 ½ tablespoons of pumpkin pie spice (I purchased mine at Trader Joes)
¼ teaspoon of nutmeg
¼ teaspoon of cinnamon

Instructions:
  1. Preheat oven to 375 degrees F (176 degrees C)
  2. Cream/whip butter and both sugars until light and fluffy
  3. Add egg and vanilla. Mix well.
  4. Mix in dry ingredients a little at a time to the butter mix. Mix at low speed until flour is completely incorporated and the dough starts to come together.
  5. You can either freeze the dough at this time or use it immediately to make your cookies.
  6. Roll to desired thickness and cut into desired shapes.
  7. Bake on an ungreased baking sheet with parchment paper at 375 degrees F for 7-9 minutes or until edges begin to turn brown.
  8. Remove from the oven and wait until they have completely cooled down to remove from the pan and decorate. (Decorating is optional)
  9. Enjoy as-is or decorate with royal icing.
Royal Icing Recipe

Things you will need:

4 cups of confectioners’ sugar
3 tablespoons of meringue powder
1 teaspoon of clear vanilla (or flavor of choice)
7-10 tablespoons of room temperature water

Food coloring (optional)

Put all ingredients in a large bowl. In a stand-up or hand mixer, start mixing at a low setting. Your consistency should look like honey. At this point, turn the mixer to medium speed for 5 minutes until the icing is thick enough to form peaks. From here, put small amounts into bowls to color and add water to reach the consistency you would like. Place icing in piping bags and have fun decorating!
