Homemade Caramel Apples

Oh, hi there Fall, you kind of snuck up on us! To be honest, I am usually an endless summer type of girl but I can’t complain too much - Fall is officially upon us and yes, we are now given the go ahead to break out all of our Fall décor, start drinking PSL’s (Pumpkin Spice Lattes), baking all of the adorable little bites and putting all of the pumpkins (both big and small) everywhere and anywhere around the house – for the kiddos of course! I know Fall for my family wouldn’t be the same without our favorite C-A-R-A-M-E-L A-P-P-L-E-S. It just feels, well, FALL-ISH. Easy breezy, kid-friendly, and most importantly…THEY ARE ABSOLUTELY DELICIOUS!! I used to be the type to think that the only way you could make caramel apples a lot easier was to buy the little individually wrapped caramels from the grocery store and melt them in a pan in hopes that they would taste half as amazing as the one’s at my favorite old school stop, Rocky Mountain Chocolate Factory. SPOILER: Let’s just say, that’s a big fat NO. Nothing even close!

About a year or two ago, my mother-in-law introduced me to this recipe. I took one bite and there was no looking back!

One thing we like to do in our family is to get the kids involved in the kitchen. Highly recommend. Not only is it great for building on those relationships but I honestly feel there’s something about cooking and baking that really make a family bond in such a special way! For this fun Fall caramel apple making day, we invited my sweet little niece over to partake in the fun! The only thing missing – my cute apron and the hat.Alright, alright. I know you’ve been patiently waiting for the recipe so here it is! BUT forewarning: messy as most caramel apples are. I feel that’s the M.O with anything that truly tastes good. ** GUARD THIS RECIPE WITH YOUR LIFE: It’s so easy and what we call “candy store” perfect every single time. Buttery soft caramel. MMM MM MMMMMM!Without further adieu, here’s our absolute FAVORITE recipe:

Kittencal’s Caramel Apples

40 min | 10 min prep
Serves 8-10

4 cups butter (or substitute)
2 cups packed brown sugar
1 cup light corn syrup
1 (14 ounces) can sweetened condensed milk
2 teaspoons vanilla
8-10 wooden sticks
8-10 medium tart apples
(makes enough for 10 large apples)

Instructions:
  1. Insert 1 wooden stick into each
  2. In a heavy saucepan, combine the butter, brown sugar, corn syrup, and milk; bring to a boil over medium-high heat.
  3. Cook and stir until a candy thermometer reads 248 degrees (firm ball stage) about 30-40 minutes and for a softer caramel cook just to a few less degrees.
  4. Remove from heat; stir in vanilla
  5. Dip each apple into hot caramel mixture; turn to coat.
  6. Holding by the stick, sprinkle with nuts or whatever you desire while the caramel is still warm.
  7. Set on generously buttered wax paper to cool (THIS IS KEY!)
  8. Note: if making a double recipe make two recipes in two separate pots.

Did you save it? GOOD. Before I forget, I forgot a very important part. CLEAN UP. Yeah, you know the thing we despise and don’t like to talk about. Haha.
