5 Fall Soups That’ll Keep You Cozy

Fall is around the corner and we are all bracing ourselves for the pumpkin spice that’s about to take over. Admittedly I am not a pumpkin spice fan but I AM a fan of the weather, the fashion, and the warm soothing food. Soup is literally one of my favorite foods and while I love it year-round, I find it especially delicious when the temperature drops and the sweaters come out of storage.My name is Jenny from @thedailyjenny on Instagram. I’m here to share 5 family-friendly soup recipes that I’ll be making all fall. I am a messy eater and apparently a messy cook. I somehow manage to make a mess even if I’m just frying an egg. You can imagine what I left behind making 5 different soups.Thankfully, Weiman has some incredible products to help people like myself out. In the end, I’d love to share cleaning tips and how I removed all the stains and crusted food off my stovetop! I like to keep my recipes really simple and whole because it is a time saver and also you can really appreciate the ingredients as they are. I also feed everything to my son so I am very mindful of what is in his food. I hope you enjoy these recipes!

Garlicky Miso Tofu Soup

1 package of medium to firm tofu
3 tablespoons of premium white miso paste
1 small snack package of seaweed
3-10 (I love garlic but please feel free to adjust) cloves of garlic
4 cups of water

Miso soup is one of the easiest to make! It can literally be as basic as hot water with miso paste. I like to jazz mine up a bit and add protein as well as garlic.

  1. Bring water to a boil
  2. Add miso paste and let dissolve
  3. Cut tofu into cubes and add to soup
  4. Add as many pressed cloves of garlic as you would like - I prefer a lot.
  5. Shred seaweed and add to soup or serve with fresh seaweed if you prefer a crunchier consistency
  6. Let simmer for 10-15 minutes to let the garlic flavor the soup
Onion & Broccoli Soup

½ white onion diced
3 cups of steamed broccoli
3-10 cloves of garlic (same caveat as before)
½ cup cheddar cheese
½ cup of parmesan cheese
1 cup of heavy whipping cream
2-3 cups of chicken or vegetable stock (less if you prefer chunkier, more if you prefer more liquidy)
Salt & pepper & paprika to taste


Broccoli soup is one of my faves! I love how hearty it is. I chose to add ½ onion and garlic to mine to give it even more umami.

  1. Steam broccoli
  2. Bring stock to a boil
  3. Add in broccoli, diced onion, and garlic
  4. Let everything simmer and soften for about 10-15 minutes
  5. Add heavy whipping cream and cheeses
  6. If you have an immersion blender, you can use that to blend. If not, move to a blender and blend!
  7. Salt, pepper & paprika to taste. Can also be served with additional cheese on top.
Rustic Garlic Tomato Soup

8-10 medium sized whole tomatoes
5-15 (again with the caveat) whole garlic cloves
3 cups of chicken or vegetable stock
Olive oil
Salt & pepper to taste
½ cup of parmesan cheese
1 cup of heavy whipping cream


Tomato soup is hands down my favorite. I like it alone. I like it with grilled cheese. Honestly, I’ll eat it for breakfast. This version is super simple and uses basically just tomatoes with some flavoring.

  1. Coat pan with olive oil
  2. Add whole tomatoes, garlic, salt & pepper.
  3. Cover and let soften for 15-20 minutes. Turn tomatoes every few minutes.
  4. Once tomatoes are completely soft, use your spatula to smash tomatoes down.
  5. Add stock and let simmer for 10-15 minutes
  6. Add parmesan cheese and heavy whipping cream.
  7. If you have an immersion blender, you can use that to blend. If not, move to a blender and blend!
  8. Serve with grilled cheese, mac n cheese, or just eat alone!
Lemon Pepper Chicken Soup

1 cup of shredded rotisserie chicken
3-5 carrots, peeled and chopped
½ - 1 whole onion, diced
4 cups of chicken or vegetable stock
Salt & pepper to taste
Minced garlic if you are a garlic addict like me
Lemon pepper seasoning (if you don’t have this, I would suggest 2 lemons juiced)

Chicken soup is such a staple whether you’re curing a cold or just want a warm, hearty meal. I really like mine super tart and lemony. I also really dislike celery so I removed it from what would be considered traditional. Obviously, you can add back in if you prefer.

  1. Bring 3 cups of stock to a boil
  2. Add carrots and onions and let cook for 15-20 minutes
  3. Add shredded chicken and minced garlic and let simmer for 5 minutes
  4. Add lemon pepper seasoning, typically 1 - 1 ½ tablespoons is plenty. Start small and you can always add more.
  5. Season with salt and pepper to taste.
Elote Chowder

2 cups of corn kernels
½ tablespoon of tajin
1 tablespoon of cotija cheese
1 tablespoon of parmesan for soup
1 teaspoon of butter
1 cup of heavy whipping cream
1 ½ cups of chicken or vegetable stock
Parmesan cheese to serve
Salt & pepper to taste

This is my different take on traditional corn chowder. It is a Mexican Elote base with stock and cream to make it into a soup base.

  1. Butter pan and add corn kernels on medium heat.
  2. Add tain, cotija, and parmesan. Saute for 5 - 8 minutes.
  3. Add stock and let boil
  4. Add heavy whipping cream
  5. If you have an immersion blender, you can use that to blend. If not, move to a blender and blend!
  6. Serve with parmesan cheese on top

I hope you are inspired to make some delicious soups this fall! Making this was so fun but it did a number on my stovetop. All the splishing and splashing left some tough stains.
